Curried Lentil Soup
This curried lentil soup is super simple to make and deliciously warming while having some great nutritional value.
Lentils are hands down one of my favorite staple foods I like to incorporate into my cooking.
Lentils are high in fibre as well as complex carbohydrates, while low in fat and calories. Their high protein content makes lentils a perfect option for those looking to boost their protein intake and is a great plant based protein source for vegans and vegetarians. They also are naturally gluten-free, making them a delicious staple for those trying to limit their gluten intake. They are also high in Potassium, folate and iron giving them an all around great nutritional value.
So what more to wait for? Lets cook some delicious lentil soup!
Instructions:
Heat up 750 ml of water in a soup pan ( I like to preheat my water with a water cooker and then pour it into the pan in order to speed up things)
Add in vegetable stock, curry powder, ginger and soy sauce.
Stir until vegetable stock dissolves and blends with the other ingredients then add the coconut milk.
Now add your finely chopped onions and garlic to the mix and let it boil at medium heat for 2 minutes.
Then add your finely chopped carrots an diced sweet potatoes.
Stir and let boil for another couple minutes before adding your kale. Now turn down your temperature to a low setting ( 2 or 3 ) and let the soup simmer for a couple minutes.
Lastly add the coarsely chopped coriander and give it one last stir.
Well done! Your soup is ready!
Serve it topped off with some delicious coconut or soy yoghurt and enjoy this deliciously cozy soup.
