Greek Bowl
This Greek bowl is hands down one of my favourite bowls. The delicious fresh Tzaziki, Tofu “feta cheese cubes” olives and vibrant veggies really give me those happy mediterranean vibes.
Greek Bowl recipe
(Serves 2)
Instructions:
We start by making our aubergine salad.
Place your diced aubergine pieces, diced red pepper, 1/2 finely sliced red onion, 1 clove of minced garlic, 1/2 teaspoon of ground cumin, 1 teaspoon of smoked paprika powder, bit of black pepper, bit of salt, bit of lemon juice, 2tbs of plant based milk and one tbs of Tahini in a skillet and stir fry on medium heat for about 5-7 minutes.
Then we make our “Feta” tofu pieces.
Place your diced Tofu pieces in a frying pan along with 3tbs of plant based milk, bit of lemon juice, 1tbs of nutritional yeast, bit of pepper and a bit of salt and stir fry for about 3-4 minutes on medium heat.
Now it’s time for Tzaziki
Add 250g of plant based yoghurt, 1/3 grated cucumber, 2 finely chopped garlic cloves, a handful of finely chopped fresh dill, bit of salt, bit of pepper and a bit of lemon juice into a mixing bowl. Give everything a good stir and your Tzaziki is ready- yes it’s as simple as that.
Building the bowl
Now that we have made our Aubergine salad, Feta pieces and Tzaziki it is time to start building our bowl.
Simply place your fresh spinach, chickpeas, sliced cucumber pieces, sliced yellow pepper pieces, sliced Tomato pieces and Aubergine salad in the bowl and then top off with your Tofu Feta pieces, olives and Tzaziki.
