Black Bean Lettuce shell tacos topped off w/Salsa Fresca
If you are looking for a light, alternative super healthy Taco recipe these Lettuce shell Tacos are perfect for you. They are super easy to make and fulfil your Taco cravings while being gluten free, protein rich and delicious.
Black beans are prized for their high protein and fiber content. They also contain several other key vitamins and minerals such as vitamin A, iron, calcium, phosphorus, magnesium and zinc.
Black bean lettuce Shell tacos recipe
(Serves 2)
Instructions:
Begin by adding the lemon juice, plant based milk and vegetable stock into a skillet and turn onto medium heat. Stir until the vegetable stock dissolves.
Now add in the finely chopped garlic and finely chopped red onion. Stir and cook for 1-2 minutes.
Then add in the diced Yellow Paprika and black beans as well as the Paprika powder, chilli powder and black pepper. Give everything a good stir and cook for 2-3 minutes
Lastly add in a handful of fresh coriander and give everything a thorough stir, then switch off the heat and put aside your Taco filling.
Now it’s time to quickly make the Salsa Fresca:
Add the finely diced tomatoes, finely chopped white onion and finely chopped Coriander into a mixing bowl and give it a good stir.
Then add the lemon juice, black pepper and salt. Give it another quick stir and your Salsa Fresca is done!
Now it is time to put together our Lettuce Tacos.
Place your 6 leaves of Romaine lettuce on a large plate or platter. Then equally distribute your Taco mix into the leaves. Lastly top off your Tacos with the Salsa Fresca. Great job! Your Tacos are now ready to eat!
