Easy oil free Falafel Bowl

This Falafel bowl is hands down one of my favourite bowls. It features healthy oil free falafel balls which are super easy to make and baked in the oven instead of deep fried( Like traditional falafel balls are) and some super tasty fresh vegan Tzatziki(Greek style Yoghurt dip) as well as some yummy fresh greens, sprouts, Quinoa and olives.

You can either quickly make your falafel balls the same day you have this bowl or you can make a batch ahead of time and then add it to this bowl or to other salad bowls throughout the week( Which is what I often do)

Now let’s get started with this super tasty Mediterranean style bowl.

Vegan Tzaziki Dip

Oil free Falafel Bowl recipe

(Serves 2)

Instructios:

Start by making your falafel balls.

Simply place your chickpeas, chopped shallots, garlic, parsley, cilantro, green pepper, cumin, salt, black pepper, cardamon, chickpea flower and baking powder in a food processor and mix for about 1-2 minutes.

If you don’t have a food processor you can also place all your ingredients in a mixing bowl and use a stick mixer or even a hand masher in order to mix everything. Obviously mixing by hand will take a bit longer than using a food processor.

Once you’ve made your falafel dough, form it into bite sized balls, place on a baking tray and bake at 200 degrees celsius for about 10-15 minutes.

Prepping the rest of the bowl:

Now quickly cook your quinoa by filling approximately 200 ml of water into a pan, bring it to a boil, add your 100g of quinoa and cook for approximately 10 minutes then set aside.

Then start building your bowl.

Add your fresh spinach , salad leaves and quinoa to the bottom of the bowl.

Now add in your delicious falafel balls to the bowl as well as your cherry tomatoes, Alfalfa sprouts and olives.

Making the Tzatziki

Now it’s time to quickly make the Tzaziki dip which is the finishing touch of thus bowl.

Simply place your plant based yoghurt, garlic, salt, pepper, dill and grated cucumber in a bowl and give everything a good stir.

That’s it your delicious tzaziki is ready to eat.

Now top up your Falafel bowl with a generous amount of tzatiki and enjoy.

Sometimes I additionally add on a bit of Tahini and lemon juice to the bowl as well but whether you do so is entirely up to you.
