GF Italian style green Bowl

This Italian style Green Bowl is super tasty and features one of my favourite things I’ve ever come up with- A Pesto Avocado dip. Trust me it’s absolutely delicious, like a kind of Pesto marries Guacamole feeling and it actually works.

For the Spaghetti I like using Gluten free Spaghetti, the one on the picture is a generic gluten free type but I actually highly recommend using red lentil Spaghetti or Green Pea Spaghetti both very high in protein and of much better nutritional value than generic gluten free spaghetti.

Avocado Pesto dip Recipe

GF Italian style green Bowl recipe

(Serves 2)

Instructions:

Add 2 tablespoons of plant based milk, 2 finely chopped garlic cloves, 1 teaspoon of paprika, 1 teaspoon of tomato puree and 1 teaspoon of ground oregano into a frying pan and turn up to medium heat.

Now cut your Tofu into bite-sized cubes, place it in the frying pan and marinade for about 3 to 4 minutes, then set aside.

Then cook your Spaghetti. Add approximately 500 ml of water to a pan and bring to a boil, then add in the Spaghetti and cook for approximately 5 minutes or according to package instructions, then set aside.

Now it’s time to prep your Zucchini. Simply add 2 tablespoons of plant based milk and 1 tablespoon of lemon juice to a frying pan and turn up to medium heat, then add in your finely sliced Zucchini and sauté for 2-3 minutes.

Add a bit of salt and pepper to your Zucchini slices and then set aside.

Now quickly steam your Curly Kale. If you don’t have a steamer simply place a metal pasta strainer in a pan, add a little water to the bottom of the pan and place a lid on top- works just as well.

For the fresh Spinach- Simply chop it a bit smaller if you like and set aside.

Making the Avocado Pesto dip:

Now it’s time to make your delicious Avocado Pesto dip.

Start by cutting your Avocado in half and removing its skin and stone, then place both halves in a bowl.

Then grab a fork and start mushing your avocado.

Once you’re done mushing the avocado, add in 1tablespoons of plant based milk and 1 tablespoon of lemon juice. Mix everything until it becomes a nice smooth texture.

Then add in your finely chopped garlic, black pepper and salt and give everything a good mix.

Lastly add in your finely diced Tomato, handful of finely chopped fresh basil and your finely chopped pine nuts.

Give everything one last stir and your delicious Avocado Pesto dip is done!

Building your bowl:

Now we quickly build the bowl.

Begin by adding in the fresh Spinach and steamed Curly Kale in the bottom of the bowl.

Then add in the spaghetti( I like to twirl it into a pretty shape using a fork) and the marinated Tofu.

Now add in your Zucchini Slices and finally top off with your Avocado Pesto dip.

Additionally I like to add some fresh herbs like Parsley or fresh Basil on top.
