Green Veggie Kitchari
Kitchari is a delicious and nourishing lentil and rice dish originating in Ayurvedic kitchen.
Kitchari is traditionally made from either yellow lentils or split peas, basmati rice, as well as a mixture of digestive spices, and ghee.
In this plant based version of the dish I use coconut oil instead of Ghee (or simply a bit of plant based milk if you wanna make it oil free), brown rice instead of basmati, and red lentils. I’ve also added some Broccoli and green beans to this version. Another thing which I would like to mention is that in strictly Ayurvedic kitchen there is no use of garlic or onion. This version of kitchari does contain a bit of garlic and onion since I prefer the taste of this dish that way however if you would like to make a more authentic version of this dish, feel free to leave out the garlic and onion.
Instructions:
Begin by placing your finely chopped garlic and onion in a medium sized pan along with a bit of coconut oil or plant based milk and turn up onto medium heat. Stir fry for 2-3 minutes.
Then add your vegetable broth, rice and lentils. Give everything a good stir and cook for about 5 minutes.
Now add your broccoli and green beans followed by your spices( tumeric, ginger, ground coriander, ground cumin, ground fenugreek, salt pepper). Give everything a good stir and add additional water. Cook for about 10 minutes.
After cooking for 10minutes turn down the temperature onto low, add a bit more additional water and cook for another 5-10minutes.

Garnish with some fresh coriander and plant based yoghurt if you like and enjoy this delicious aromatic healthy dish.
