Asian style spicy peanut noodle stir fry

This moderately spicy peanut noodle dish topped off with Crispy Garlic Tofu is one of my favourite simple Asian style dishes. It’s got just the right amount of spice to it simmered down by a creamy peanut sauce and is packed with delicious vegetables.

Asian style spicy peanut noodle stir fry recipe

(Serves 2)

Instructions:

First we cook our noodles. Add 450ml of water to a pan and bring to a boil. Add in the noodles and cook for approximately 5-10 minutes( rice noodles cook super fast so be careful not to overcook)

Strain the water from the noodles and set aside.

Now it’s time to make our peanut sauce. Add 4tbs of peanut butter, 150ml of hot water and 50ml of plant based milk into a mixing bowl and whisk until smooth.

Now add your finely chopped garlic, soy sauce, lemon juice, chilli powder, paprika and siracha to the sauce and whisk for approximately 1 minute.

Then pour the sauce into a wok or frying pan and heat up to medium/high temperature.

Now add your finely chopped shallots, diced peppers, diced carrots and peas to the pan and give everything a thorough stir then cook for 2-3 minutes.

Then add in hour fresh coriander and give your your peanut& veggie sauce one last good stir before adding in your cooked noodles.

Once you’ve added in the noodles cook for another minute while stirring thoroughly. Then cover and set aside while we prep our Tofu.

Add 1tbs of sesame oil, 2tbs of soy sauce, 4 cloves finely chopped garlic and a tiny bit of black pepper into a frying pan and turn onto medium heat and give it a good stir.

Then cut your Tofu into medium sized pieces and place in the pan. Cook for 4-5 minutes ( depending on how crispy you like it) and then flip it over to the other side and also cook for 4-5 minutes.

Now that your Tofu is ready it is time to put together your dish. Place your Spicy Peanut stir fried noodles on a plate and top them off with your freshly cooked garlic Tofu. Then I like to garnish this dish with some additional fresh coriander, a handful of finely chopped green onions and some peanut pieces.
