Purple Rice& fake prawn Plant based Sushi

This purple rice plant based sushi is one of my favourite plant based alternative sushi recipes.

The sushi filling is a combination of avocado, cucumber, carrots and fake prawns made with white beans. Despite being a big fan of Tofu in general, I really enjoy this Tofu free vegan sushi alternative. Also making your own sushi is much easier than you think and definitely cheaper than buying ready made sushi.

Purple Rice& fake Prawn plant based sushi recipe

(serves 2)
Instructions:

We start by making our sushi rice.

Add 250 g of sushi rice and 500 ml of water to a pan and cook for approximately 20min.

When your rice is cooked place it in a mixing bowl and add 100g of finely chopped purple cabbage to the bowl. Mix until the rice turns a nice purple colour then set aside.

Now it’s time to make our fake prawns.

Add 100g of white beans to a mixing bowl, then add the soy sauce, lemon juice, paprika powder, chilli powder, miring sauce and black pepper to the bowl. Stir until your white beans turn a nice reddish/pinkish colour.

Now the time has come to roll our sushi. Never rolled sushi before? It’s easier than you think.

Firstly before you start rolling your sushi make sure that you have a small bowl of water next to you since you will need a bit of water to seal the sushi as well as wetting your fingers now and then in case they get too sticky from the rice.

You can either use a bamboo sushi roller or some tin foil and a kitchen towel if you don’t have a sushi roller (Honestly it works just as well).

If you use a kitchen towel and tin foil, place the tin foil onto of the kitchen towel and then place the Nori sheet onto of the foil. If you use a traditional bamboo sushi roller place the Nori sheet directly onto the bamboo roller.

Now place approximately 3 heaped table spoons of sushi rice onto your nori sheet and evenly distribute the rice onto the sheet while leaving a bit of space at the end of the sheet so that you can seal the sushi roll.

Then place 2 cucumber slices, 2carrot slices, 3 avocado slices and approximately 6-7 white bean fake prawns at the top of your nori sheet and gently start rolling it while applying a bit of pressure. When you get to the end of the sushi roll, sprinkle a bit of water onto the last part of the sheet so that you can easily seal your sushi roll.

When you are done rolling your sushi roles, it is time to cut the roles into little sushi slices. Make sure to use a sharp knife while you do this since the sharper your knife is the easier this cutting process will be and the less likely it will be that your sushi slices will fall apart. Cut your sushi roles into approximately 5-6 sushi pieces.

Now that you've cut all your sushi pieces it’s time to quickly make our sushi dipping sauce.

Add your soy sauce, lemon juice, plant based milk, minced or ground ginger, minced garlic and black pepper into a mixing bowl and give everything a good whisk then pour into little dipping dishes.
