White Bean Pomegranate salad

This white Bean&Pomegranate salad is refreshing, light and super tasty. I Enjoy having this salad in a zesty plant based yoghurt- basil-lime dressing which I will list a recipe for below however this salad could work with many different types of dressings or even just some simple balsamic vinegar and olive oil as a dressing would be super tasty.

Pomegranates are full of antioxidants, have anti-inflammatory properties and are high in fibre.

White beans are a nutritious powerhouse being rich in protein, fibre, folate, magnesium and B6.

Then we’ve also got some iron rich spinach and antioxidant packed arugula to add a bit of green to this salad.

Zesty Lemon Basil Yoghurt dressing

Instructions:

Place the spinach, arugula and white beans in a salad bowl.

Then take your pomegranate, extract the pomegranate seeds and add them to the salad bowl as well.

Lastly add your finely chopped green onions to the bowl and give everything a good stir.

Now it’s time to make our dressing.

Add the plant based milk and plant based yogurt into a bowl and give it a quick whisk.

Then squeeze the juice of your 1/2 lemon Into the bowl and give everything another little whisk.

Now add salt, pepper and your finely chopped Basil leaves. Give everything one last stir and your salad dressing is ready.

Now put your delicious salad into serving bowls, pour the dressing onto it and add some avocado slices ontop.
