Quinoa Chia Seed Pancakes

These Quinoa Chia seed pancakes are super tasty while also having great nutritional value, making them the perfect dish to start your day, or add to a relaxed weekend brunch.

Quinoa is an extremely nutrient dense grain which is rich in protein, fibre, magnesium, folate, iron and zinc. It is also one of the few plant foods which contains a sufficient amount of all 9 essential amino acids.

Chia seeds are a great source of omega-3 fatty acids, protein, as well as several essential minerals and antioxidants. Chia seeds are native to Mexico and Guatemala and were an important staple food for the ancient Mayans and Aztecs. The word “Chia” in fact is an ancient Mayan word meaning”strength”.

Quinoa Chia Seed Pancake Recipe

Instructions:

Begin with making your flax egg by adding 1 tablespoon of flaxseed meal and 3 tablespoons of water into a mixing bowl. Stir until the flax meal has thoroughly mixed with the water and becomes a slightly sticky texture.

Now add the plant based milk and coconut oil ( Make sure that the coconut oil is soft enough or pre-melted in a pan) and give everything a good stir.

Then slowly add in your flour, baking powder, tiny bit of salt and sugar/sweetener while stirring constantly.

Once your pancake mix has reached a nice smooth consistency, add in your cooked Quinoa and chia seeds. Give everything a good stir and set aside for 5 minutes. This time is needed so that the chia seeds are able to soak in the pancake mix and become soft and chewable.

Now heat up a frying pan onto medium heat. Add a bit of coconut oil into the frying pan (If you have a non-stick pan you won’t need any extra oil)

Then grab your pancake mix and and a ladle or big spoon and start scooping out and placing your first 1 to 2 pancakes (depending on how big your pan is) in the pan.

Let the pancakes cook for 3-4 minutes, then flip over and cook for another 2-3 minutes.

Repeat this until you’ve used up all the pancake mix.

Once all your pancakes are done, stack them and top them off with some fresh fruit and a bit of plant based cream if you like.
