Nasi Goreng ( Indonesian fried rice )
This simple Indonesian style fried rice dish is one of my all time favorites. It is delicious and packed with vibrant vegetables while having a bit of heat and juiciness to it. This recipe is traditionally cooked with long grain white rice, however my version is with brown rice in order to make this dish even a bit more nutritious and healthy.

(Serves 2)
Instructions:
First cook your rice. Add 4 cups of water for 2 cups of rice ( double water to rice ratio) and cook at medium temperature for about 20 min or according to package instructions.
Secondly add all the Sambal ingredients into a blender and blitz until it becomes a smooth paste.
Pre heat your wok or frying pan on high heat and add 3 tbs of sambal together with 3 tbs of soy sauce and 3tbs of sesame oil or soy milk. Cook for a minute while stirring frequently.
Then add the vegetables and Tofu and fry for 5 to 6 minutes.
Then add your cooked rice and stir fry for 3-4 minutes ( Be sure to really stir frequently enough so that the rice doesn’t stick to the bottom.
Lastly add in your cashed nuts and stir for another 1-2 minutes. When the rice is beautifully coated in all the flavors, turn off the heat and let cool down for a minute.
Your delicious Nasi Goreng is now ready to serve! I like to garnish mine with some fresh coriander.
Also if you want this fried rice dish to have a pretty shape you can press the rice into a tea cup and then turn it upside down onto a plate creating a little rice tower.
