Creamy Mushroom-potato-Kale Risotto
This Creamy Mushroom-potato-Kale risotto is absolutely delicious and perfect for a cozy dinner. The Potatoes are perhaps a bit of an untraditional risotto ingredient but it works really well and adds a bit of extra texture and extra creaminess.
Mushrooms are a good source of vitamin D as well as containing B vitamins and antioxidants.
Kale is king of all the super healthy greens. This cruciferous vegetable is incredibly nutritious. It is rich in iron, vitamin K, vitamin A, vitamin C, calcium and antioxidants. So adding Kale to any dish will give it a nice nutritional boost.
Instructions:
Place your finely chopped shallots, garlic, pine nuts and vegan butter in a pan and turn up to medium heat. Stir fry them for about 1min.
Now add in your Chestnut mushrooms, give everything a good stir and fry for another minute.
Now add in your risotto rice and stir fry for no longer than a minute, then immediately add in your vegetable broth.
Now add in your finely diced potato and Kale then let it cook for about 15-20 min until the rice has absorbed most of the water.
Then add in your plant based cream, pepper, salt and fresh basil. Give everything a good stir, turn down onto low heat and cook for another 5 minutes.
Lastly add in a little lemon juice and give everything one last stir.
You’re Risotto is ready to eat now!
I like to garnish my Risotto with some fresh parsley and a bit of Nutritional yeast.
