Fun plant based outdoor meal ideas
Outdoor nature adventures are fun and they are even better if you have some delicious food with you.
Whether you plan to make a fire, have a portable grill with you or simply plan to have a picnic, plant based food which can easily be eaten outside doesn’t have to be dull by any means.
Here are some ideas for what kinds of meals you could prep for your next adventure.
Veggie Tempeh Skewers
The possibilities of grilled vegan skewers are endless.
You can use either Tempeh or Tofu and whatever vegetables you like.
Simply prep your skewers before you go on your outdoor adventure and then throw them on the grill or roast directly on the fire by holding the skewers above the flames (provided you have long enough skewers to do so)
If you want some extra flavour, bring along some BBQ and hot chilli sauce for your skewers once they are cooked.
Mmmmm so delicious !!
2. Chia Pudding in a jar
Chia Puddings in a jar are a great healthy snack to bring along for the road.
Chia seeds, which are one of todays perhaps most popular superfoods, are extremely nutrient dense and antioxidant rich.
These super seeds were first consumed by the Mayans and Aztecs, in fact the word “Chia” means strength in the ancient Mayan language.
To make Chia Puddings, simply place some chia seeds in a jar and soak in some plant based milk over night.
Then you can add whatever flavours you like to it- cinnamon, vanilla extract or perhaps a bit of maple syrup are one of my favourites.
Additionally you can add some fresh fruits and nuts to your Chia puddings, then seal the jar and off you go!
3. Stuffed Mushrooms on the grill
Stuffed Mushrooms on the grill are definitely one of my all time favourite plant based outdoor meals.
They are so quick and easy to make and you can get as creative as you want with the stuffing.
You can stuff them with onions, vegan cheese, beans, finely chopped tomatoes, fresh herbs, shredded carrots, green peas, vegan béchamel sauce, lentils- the possibilities are endless.
Simply stuff your mushrooms and warp them in foil before you take off on your adventure, then simply just place on the grill for 5-10 minutes and enjoy.
3. Veggie Wraps
Veggie Wraps are another super convenient food to bring along for a picnic.
You can either make a cooked filling for your wraps by sautéing some veggies of your choice or you can make your wraps cold and use some salad veggies to stuff them with.
Roll your wraps before you take off on your venture and season them nicely with some fresh herbs and perhaps some salad dressing, hummus, guacamole or hot sauce.
4. Quinoa Salad in a Jar
A Quinoa salad in a Jar is a super easy and nutritious meal to take with you to a picnic or on a nature hike.
Quinoa is very high in fibre and protein making it the perfect food for a long adventurous day.
To make a a Quinoa jar salad simply cook a generous portion of Quinoa, let it cool down, then place in a jar and add some of your favourite veggies and legumes such as chickpeas, black beans or kidney beans to it.
Then add a salad dressing of your choice, seal the jar and shake - Voilà, your yummy Quinoa salad in a jar is ready to go!
6. Vegan Burger wrapped in Salad leaves
Whether store bought or homemade, I think we can all agree that Vegan Burgers are delicious.
This gluten free, healthier version of a Burger is super outdoor friendly and just as delicious as a traditional style burger.
Either get some store bought vegan burgers of your choice or make your own burger patties to take with you (Check out my Healthy Black Bean Burger recipe under Plant based recipes), pre-slice some fresh tomatoes, onions, avocados etc. for the garnish and grab some big salad leaves ( outer leaves of the salad work best) to pack with you.
Don’t forget to bring some exciting sauces with you as well and perhaps some mustard/vegan mayo/ketchup.
Grill your burger on your glorious outdoor fire/grill and build it on the spot.
