Luscious Beetroot soup
This beetroot soup recipe is perfect as a cozy evening meal or rainy afternoon, tastes delicious and is packed with nutritious goodness.
Beetroots are packed with essential nutrients, they are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C. The vibrantly red root vegetable has been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.
Instructions:
First start by pouring your water into a soup pan and bring it to a boil. Then add the quinoa, vegetable stock and miso paste. Let it cook for 2-3 minutes.
Now turn down the temperature to medium heat and add the tomato paste, plant based milk and plant based cream. Give everything a good stir and cook for 1 minute.
Now add the finely diced beetroots, garlic and red onions, give it a quick stir and cook for about 3 minutes.
Then add the black pepper and parsley, turn down the heat onto low and simmer for 10-15 minutes.
Lastly add your plant based sour cream into the soup and give it a good stir.
Fantastic your delicious Beetroot soup is now finished!
Serve into soup bowls and garnish with some plant based yoghurt, finely chopped green onions, and some fresh basil.
